Scryers is for casters, Aldor is for melee/tanks/healers. Scryers enchants give Spell Damage, Spell Crit and Spell Hit - perfect for Mages, Warlocks, Shadow Priests, Elemental Shamans, Balance Druids. Aldor gives Attack Power and Defense stats. The stat difference is small but matters for min-maxing. More importantly you can't swap easily once chosen - switching to the other faction means grinding back through Neutral which takes weeks.

Shoulder enchants are why you pick Scryers. Greater Inscription of the Blade for DPS casters, Greater Inscription of the Oracle for healers. These stay BiS through Black Temple. Scryers also sells rings and profession patterns. Shoulder enchants cost Arcane Runes which you get from turn-ins - 8 runes per enchant.
